【What is Nakiri knife?】
Deba knives were originally made for filleting a fish but nowadays we mainly use them for filleting a fish and cutting meat.

Blue paper steel is one of the most expensive steel for making Japanese knives. 
The biggest characteristic of blue steel is that the excellence at edge retention and sharpness. 

【Kurouchi finish】
About Kuro-uchi (Black hammering )finish It can have blackened surface by quenching, then the blackened blade part is shaved off, but still leaving the sides black. It has no elegance of a polished finish, actually it has a bumpy, rugged look to it, yet the advantage of being less prone to rust than a polished finish is remarkable.

They have more than 450 years of history and they use sword-making techniques to make knives.

Cutting very hard  or frozen stuff might cause the nick in the blade
